    1 cup red lentils + 2 cups water, 2 tbs flex meal + 4 tbs water

    Shortcut - just put the lentils and other ingredients in the blender with water. No need to make lentil flour as a separate step. Works well for me. 😊
  • I tried putting the red lentils in the vitamix with the water without grinding the lentils first. I added the soaked flax and blended again. Put the mixture in the fridge overnight. The wraps turned out amazing! So it is not necessary to grind the lentils first.
  • It is so much easier to just soak the red lentils in water, 1 cup lentils, 2 cups water, put in the blender and cook in a non-stick pan. No flax necessary, no making flour necessary.

    I cut tofu into strips, browned them in a frying pan then added buffalo sauce. Then I had a buffalo wrap with my red lentil wrap lettuce and tomato.

    I put roasted cauliflower bites buffalo style with hummus as the base. Yum!

    Finally found a red lentil wrap recipe that isn't almost paper then. Looks like it is about the size of a pancake, thickness. And cashew ricotta? Gotta try all the flavors! Can hardly wait to try these! If my son also likes these, I will need to hide some of them just to make sure I can still enjoy them. He isn't plant based, but he likes a lot of my food. It is hard to batch cook when he eats a large portion of what I fix and I want to be able to put some away in the freezer. I'm thinking about putting in some of my "ground meat" mixture with some spinach, finally chopped tomatoes, shredded green jackfruit, and some sautéed onion. I can taste it now! Thank you all for sharing these recipes. Something more to look forward to.

    I was always taught to rinse lentils to remove dust and dirt. Instead of blending dry to make a flour, I rinse first, soak in boiling water, then blend into a batter.

  • Oh wow, I am going to make these tomorrow for sure. I am thinking of a mock breakfast burrito, filling the wrap with scrambled tofu, seasoned with a bit of kala namac salt. Just a dash, for the egg flavor. Then adding roasted onions, and maybe some homemade salsa and a slice of avocado. Jumm. I like your version too though, with the spinach. I think this would be also great as a mock spanacopita (greek spinach wrap, turned vegan). Let`s see: cooked spinach, and for the cheese maybe some silk tofu, mixed with nutritional yeast and herbs and spices, or maybe a vegan szaziki sauce, made from vegan sour creme, shredded cucumber and garlic....... I bet you could even eat these wraps just like crepe, and fill them with a homemade chocolate creme or cinnamon apple sauce. .....

    I use a mill to make the lentil flour. I also make biscuits with lentil, Einkorn wheat, and oat flours that are delicious.
