I'm sorry to have to write it ... but this "thing" has no bearing on the recipe for Amatriciana .... NO butter, NO bacon, ESPECIALLY NO onion at all (especially in that monstrous quantity), the onion is practically raw when the tomato is put in the pan, before putting the sauce the GUANCIALE (not the bacon or the pancetta) is blended with the white wine, the cold and overcooked pasta sticks and does not join with sauce: the pasta is cooked in a pan together with the sauce, the cold pasta is never put together with the sauce. Never put the chilli pepper in the amatriciana. What I see in this video is a heap of raw onion in the sauce. You really mistreated this recipe. I wonder why you persist in calling your absurd interpretations by other names. This is NOT amatriciana at all. Mi dispiace doverlo scrivere... ma questa "cosa" non ha nessuna attinenza con la ricetta dell'amatriciana.... Non si usa il burro, non si usa la pancetta, SOPRATTUTTO non si usa per niente la cipolla (soprattutto in quella mostruosa quantità), la cipolla è praticamente cruda quando viene messo in padella il pomodoro, prima di mettere il sugo il GUANCIALE (non il bacon o la pancetta) viene sfumato con il vino bianco, la pasta fredda e scotta si attacca e non si unisce al sugo: la cottura della pasta si termina in padella assieme al sugo, non si mette mai la pasta fredda assieme al sugo. Non si mette il peperoncino nell'amatriciana. Quella che vedo in questo video è un ammasso di cipolla cruda dentro il sugo. Avete davvero maltrattato questa ricetta. Mi chiedo perchè vi ostinate a chiamare con altri nomi le vostre interpretazioni assurde. Questa NON E' affatto l'amatriciana.
