As a dietitian, I work with individuals to balance blood sugar levels, maintain hormone balance, and
achieve weight loss! We do this by following low net carb, high lean protein, high fiber, and omega-3 fats! Often, I am questioned by clients, ‘Can I still eat my favorite foods?’ and more diabetic slow cooker, diabetic slow cooker recipes, diabetic slow cooker meals often ‘What can a prediabetic eat?’ The most important question I am asked is on reversing prediabetes. Keto Pizza Chaffles
2 ounces of goat cheese
1 egg
½ cup shredded cheddar cheese
Pizza sauce (low carb)

Place goat cheese in a microwavable bowl.
Microwave for 10-20 seconds.
Stir. Add in egg.
Using a fork, whip mixture.
Stir in shredded cheddar cheese.
Using an ice cream scoop, fill it ¾ way with chaffle mixture.
Pour in Dash Waffle Maker.
Close lid and cook for 4 minutes.
Remove and serve with pizza sauce.

Keto Zucchini Chaffles
1 egg
½ cup shredded cheddar cheese
½ zucchini, shredded

Using a cheese grater, shred zucchini. Place to the side.
Add in egg in bowl.
Using a fork, whip mixture.
Stir in shredded cheddar cheese.
Add in zucchini.
Using an ice cream scoop, fill it ¾ way with chaffle mixture.
Pour in Dash Waffle Maker.
Close lid and cook for 4-8 minutes.
Remove and serve with pizza sauce.

Keto Oreo Chaffles
4 ounces of goat cheese
1 egg
6 Catalina Crunch Oreo Cookies, crushed

Place goat cheese in a microwavable bowl.
Microwave for 10-20 seconds.
Stir. Add in egg.
Using a fork, whip mixture.
Stir in crushed catalina crunch cookies.
Using an ice cream scoop, fill it ¾ way with chaffle mixture.
Pour in Dash Waffle Maker.
Close lid and cook for 4-8 minutes.

  • Another 5 star recipe! I loved your goat cheese pizza crust and these goat cheese chaffles are another winner. I agree with you that goat cheese makes all the difference. I think I will try to tweak the basic chaffle recipe a bit to have a little sweetness for a morning "waffle." Here in AZ, I get my goat cheese at Aldi's, it's so inexpensive, comparably.   • Our favorite way to eat zucchini is stewed with bell pepper, onion, and tomatoes. Then top with cheddar cheese. Love that melted cheese! Still laughing about lactose intolerance 😂😂
