I made a dome with sugar.

Sugar domes should be cracked with a spoon.
Perfect when you want to relieve stress! I think it is
Many confectionery YouTubers are making “Tanghulu” desserts, should I make them too?

The sugar dome on top of the pretty tart was fantastic.
It was raining all day on the day of filming, so it was a little difficult to make a dome with sugar, but after making it, it felt so pretty.
I made a twisted pattern on the side of the tart.
To make the pattern come to life, I tested different doughs and tested the way they were made several times.
It was a process to make it easier and prettier, but it was a bit difficult because my physical condition was not good.
As much as I put a lot of effort into making it, I hope that many people will watch it... That's my wish, right?

This time, I filled the inside with Vanilla Crème Diplomate.
Crème Diplomate is a cream made by mixing whipped cream with patissier cream.
Crème pâtissière, used by many confectioners, is also known as custard cream.
The flavor of vanilla bean and sweet fruit are in perfect harmony with this tart.

● Cup measure standard
237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)

● Pie dough
   • [Eng Sub] 과일 타르트 만들기 / 딸기 파이 만들기 / 바구...  

( Mold size: 10cm / 5ea )

250 g all-purpose flour (1 cup + 3/4 cup)
150g unsalted butter (1/2 cup + 3Tbsp)
55g water (3Tbsp + 2tsp)
6g sugar (1/2Tbsp)
1 g of salt
1 yolk

♥ Rich Vanilla Crème Diplomate
yolk 1
15 g sugar ( 1 Tbsp + 1/2 tsp)
8 g cornstarch ( 1 Tbsp )
100g milk (1/3 cup + 1 Tbsp + 1 tsp)
1/2 vanilla bean
30g sweetened condensed milk ( 2 Tbsp )

120g heavy cream (1/2 cup)

♥ Isomalt 180g (1 cup)
or
(Sugar 150g , Water 40g, Starch Syrup or Glucose 100g)
Add the above 3 ingredients and boil to 150C (302F).
* Isomalt?
Alternative sugar in the form of sugar alcohol with physical properties similar to sugar. It is mainly used for decoration or sugar craft, and it is resistant to moisture.
It has no odor and has a sweet taste, and is 0.45 times sweeter than sugar, but tastes similar to sugar, and has no aftertaste and is refreshing.
The biggest advantage of Isomalt is that it does not cause browning by heating.
So you can get a clear and transparent product.

♥ Egg Wash
Egg: milk = 4:1 mix.


♥ White Chocolate
fruit jam

    Hello Mrs. Boone, I'm not much of a baker. However, after watching this, it has been on my mind for quite some time. Yesterday I finally decided to attempt to make this myself. You gave great instructions, and I appreciate the dimensions you provided for everything. I also learned the difficulty of obtaining quality vanilla bean sticks (well, in America at least), so ordering them online from a reliable source was worth it. Overall, I am very amazed with how it turned out. The vanilla diplomat is absolutely delicious! I can go on and on about this pastry, but you definitely allow the dessert to speak for itself. Anyway, I just wanted to thank you for always showcasing your gorgeous work. This was very fulfilling. 😊
