Today I'm sharing how I can pickles in my country kitchen. Always check with your local extension office for home preserving methods that are best for your altitude. I've canned pickles this way for nearly 25 years and we all love them. The key to a crunchy pickles is to always use the freshest cucumbers and pick them when they're small if possible.

MY COUNTRY KITCHEN DILL PICKLES
For each quart jar:
Place one garlic clove in jar, pack tightly with baby cucumbers, fold up and cram in 1-2 stems of dill, sprinkle in 1 T. sugar and 1 T. canning salt, pour over 1/2 c. 5% acidity white vinegar, fill jar with water to 1/2" from top. Place lid and ring on jar and gently tip until sugar and salt are dissolved. Place in water bath canner in which the water is nearly boiling. Once the water comes to a rolling boil, reduce heat to a gentle, slow boil and set timer for 7 minutes. When timer buzzes, turn off heat, keep covered for 8 more minutes so total time is 15 minutes. Remove to a double layer of towels and let set for 24 hours. Test lids for seal, label and store until someone's hungry for pickles.

    Thank you for this simple video. I grew up with a family that canned, but didn't get interested until now. Pickles are so easy based on your instructions, and I am going to try it this fall (if it's not too late).

    How long until they actually taste like pickles? I assume that the canned cucumbers need to wait weeks to be eaten so they taste strong enough and taste pickled. I made pickles as a kid but i cant remember how long we waited.
