No trip to Hong Kong is complete without a meal of dim sum, a range of small dishes still enjoyed as brunch by the city’s residents today, as it has been for many decades. To explore what makes the best yumcha, as the cuisine is locally known, we go to two time-honored restaurants. The family that owns Lin Heung Kui and Lin Heung Tea House have been running dim sum eateries in the city center for nearly a hundred years. In an episode that is both savory and informative, we follow the work of the top chefs at the restaurants, from the time that they get up in the morning, long before the rest of the city.

that opening was insane lol...for a bit there i thought it wasn't about food at all. After that though it's a fantastic video. None of the usual youtube nonsense. I wish it had a lot more views. The attention to technical detail is beautiful.
