I’m dealing with a dismissive avoiding woman who literally entertained a coworker who she invited to a trip we were supposed to go on together. Basically disrespecting me behind closed doors and lying to me in my face. So I recently let her go and decided to respect myself.

The types of people you spoke of could also be known as "Impossible People, and how to avoid them". I personally do not want anything to do with the manipulative personally person. The selfishness is so cruel.
