To anybody out there suddenly thinking that sourdough is gluten free because of this video. I just wanted to say it's not gluten free but many people with IBS, gluten intolerance, or gluten sensitivity can tolerate sourdough bread. This is because the methods used to make sourdough break down some of the gluten in the flour so it is easier to digest. Think of sourdough as low-gluten instead of gluten-free.

Great video. I left my 60 hour work week, that I did for 20+ years and I have times when I don't do much. I work in 2 to 4 hour chunks and that is the perfect balance. So many of us think we have to be busy all the time. It is soul sucking.
