Had a 5 pound bag of mandarin oranges given to me, I'm the only one in my house that likes them. I didn't want them to go to waste, so I canned them up. Actually got 6 pints out of them. 😊 it's the little things that make me happy.
  • What I do for broccoli and cauliflower is wash, cut into one- bite pieces and PICKLE them. They will stay in the refrigerator for 3 -6 months. I don't use the standard pickling spices, I made up an " Oriental blend" of ginger, cilantro, onion, garlic, etc. and then when I want stir fry, I have the vegetables cut and spiced, add some protein and rice or noodles (especially the very thin rice spaghetti type: 3 minutes to cook) and you can have a meal on the table in about 10 minutes.

My favorite secret ~ Creamed asparagus on toast. It’s best on crap white bread. It’s made just like SOS, but with asparagus. My mother made this and I devoured it as a child. It’s my favorite food memory. 😊

We found cabbage for .59 a pound the week before St Patrick's day. Bought enough to make 3 quarts of fermented kraut. It went back to .99 a pound on Monday.
  • So this is off the subject, but I want to say that you are looking great, and you are looking very healthy as well. Lots of people that go through what you did and just not looking too good. Again you look very good and very healthy! Congratulations!
  • Thanks for the list! Last year, I got $.99 pineapples, but so far, $1.99 is the cheapest I've found. I like having some canned on the shelf. Same with the Mandarin oranges, which have about doubled in price since last year.
  • I freeze dried radishes and boy were they spicy, I love radishes roasted they taste like cauliflower.

The absolute best asparagus I've ever had was foraged. That was in a food group of its own!
  • In cana duh...asparagus, $3.00 lb. (Prices as of yesterday), strawberries, $6.00 lb., chicken, $13.00 lb., pork loin $6.00 lb., peppers $6.99 lb., pineapple $6.00 each, mango, $3.00 each, avacodo $2.99 each, sirloin steak $25.99 lb., cauliflower and broccoli $6.00 lb. Prices are different here. Much higher. And our growing season so much shorter.

I buy broccoli, trim it the way I like it, blanch it for about 4 minutes and cool in ice water. I freeze it on a cookie sheet, then vac seal a side dish size serving in microwaveable vac seal bags. It goes in the freezer, and when I want broccoli, I simply cut a small slit in the bag while still frozen and cook it in the microwave about 4-5 minutes. Just like the steamable bags you get in the frozen veggie dept!

Coming to the end of the citrus season, good time to can up those fruits. National freezer food month March is my April so looking for those deals for vegetables and fruit they are still cheaper in my area (Alaska) than anything fresh available. I have done mushrooms dehydrated, canned and freeze dried they are all great for different reasons. If you have carrots growing hairs save a few and plant them to get seed, carrots take two years for seed save yourself some time😊 and get good seed GMO terminator carrots will not grow hairs.
