Clever Cook: "Make it right, or don't make it at all."

Singe the hair off the pig's feet with a mini food torch. Put about 15 hoof halves in a large pot with about 2 inches of water above the feet. Add 2 TBLS salt, one TBLS Basil and several Bay leaves. Cook on high for 30 minutes to bring to a full boil. Reduce heat to med-high and cook another 45 minutes.

While the hooves boil, mince one whole garlic and brown in about half cup of Olive Oil. Then add 4 cans of pureed plum tomatoes, and 2 cans of tomato paste. Add 2 TBLS of salt, 1 TBLS of Sage and 1 TBLS of Oregano. Add some black and red pepper to taste. Bring to temp and continue to cook on low-med until the pork is ready.

Drain the feet and continue cooking in the sauce for another hour. Remove the Bay leaves as you find them. Best served with Ziti or other large pasta.

    I did this 20 years ago for my Nana I just brown the feet first and cook in sauce

    I have been eating that for years. I never boiled the pigs feet though so the sauce/gravy does get thicker but I love the taste. I’m going to do your method next time. You can do this with pig tails too. Years ago at a festival I attended in Mississippi a vendor was selling barbecued pigs feet and it was mighty good. I think what they did was boil the pigs feet with seasonings in the water like onion, peppercorns, maybe chunks of bell pepper, carrot, etc.. Cook until very tender pretty much ready to eat then put them on the grill and cook for a while adding barbeque sauce. OR, put the feet in the oven with the sauce. There are many recipes on cooking pigs feet and tails on YouTube. I enjoyed your video.
