INGREDIENTS
FOR THE VINAIGRETTE
1/2 cup (110g) extra virgin olive oil
1/2 cup (120g) red wine vinegar
1 tablespoon (13g) honey
1 1/2 teaspoons Dijon mustard
1/4 cup minced parsley
salt and pepper - to taste
FOR THE SALAD
3 pounds (1362g) red potatoes - cut into 1 1/2-inch cubes
3/4 pound (340g) green beans - stems removed and cut into 3-inch pieces
1 cup (100g) thinly sliced red onion
12 ounces cherry tomatoes - halved
1/4 packed cup basil leaves - hand torn

    If you grew up in an Italian-American household you'll probably recognize this classic. Often, it's made even simpler and tomatoes and onions are omitted. The ingredient amounts (also in grams) are right in the description and the print recipe is linked there as well.     Marinate onion first in vinegar couple hours and then mix with other ingridiens,olive oil direct on potato....Greeting from Croatia,mediteranian food are simple...This salad can.also made with anchovies..

    My family made this summer salad. We did not use tomatoes but instead added black olives, rinsed capers, chopped anchovies, and/or hard boiled egg.

    I grew up with this salad, the much simpler version, made in the summer only, which makes sense because that’s when we had fresh green beans. I make it just like my Nona did … potatoes, string beans, red onion, red wine vinegar, evoo, oregano, S&P … that’s it! It’s delicious. I’ve never thought about adding tuna to it. It’s definitely something I will try when I make your version of this classic.
