Old Country Brazos Mods and Testing

Here are some easy mods to make to an Old Country Brazos smoker to greatly improve the quality of the briskets. Some of these mods may apply to other brands as well. Results are only opinion from my own random testing shown here, and my opinion is that the heat deflector by the firebox hurts more than it helps.

The mods I did and did not want to "re-invent" were already done by Raleigh Smoke on his channel. I'm basically adding to his mod videos simulated testing of a brisket cook by placing a large object in the cook position and taking temperature measurements top, front, bottom, and back.

    I'm glad I'm not the only person to notice the exhaust hole is smaller the the stack ID.

    Wow! Impressive , thank you for showing us the problem with the deflector plate, the mad scientist mentioned that a while back, I'm putting on a cutting wheel on my grinder and fixing mine this weekend! Thanks again !
  • I left my heat deflector plate in and drilled several 1 inch holes in it. Also I enlarged the opening in the cook chamber to match the diameter of the stack.

    Great video I have a wrangler I took my deflector plate out as well I also use a deflector in place of my cowboy grate I put the water pan in the firebox on top of the deflector

    Hi. Eye opening video. I just picked up a used Wrangler. Love it. I'm running the slotted firebox grate upside down in the cook chamber as a baffle. When given time, the temps even out good. I use the fire box top cook grate in the bottom. Was thinking about drilling a few holes in the deflector plate that you took out

    Excellent vid! Thanks for showing all 4 scenarios. I've been testing these exact things with my Old Country Pecos. Best results are without baffle and adding extension on chimney. Temps on left side are well regulated but the right side has a severe hot spot. Not a big deal but would like to utilize more of the grate. Any ideas to lessen the hotspot near the firebox would be appreciated. Again, thanks for showing all the data!

    You can buy a massive ball valve from Home Depot or Lowe’s to thread on.
