Fuel your body after cancer with this CANCER FIGHTING salad.
Ingredients:
1 cup cooked quinoa
1 cup cucumber, chopped
1 cup broccoli, chopped
½ cup mint, chopped
⅓ red onion, chopped
¼ almonds, chopped
1 15 ounce can chickpeas, drained and rinsed
1 lemon, juiced
⅛ cup olive oil
½ cup low fat feta cheese, crumbled
2 cups mixed greens or spinach, roughly chopped
Sea salt, to taste
Ground pepper, to taste
Directions:
Add all ingredients to a large bowl and mix. Enjoy. Simple & your entire family will love.
