For the pioneers that blazed the trail, it was important to get as many meals from every catch as possible.

The meat jelly would be dehydrated over the fire and packed because it was sustainable for the journey.

The dryer, the jelly, the longer it will last. I've used pocket soup I've had in the pack for more than a year with no change in quality.

I have made meat jelly from beef, chicken and turkey. It is great for flavoring noodles and wild foraged greens.
