AGEs: The Surprising Link Between our Diet and Aging [Advanced Glycation End Products]

AGEs can be generated not only from high blood sugar levels (diabetes) but also from other factors like high fructose intake, lipid peroxidation, alcohol consumption, and smoking. Consumption of processed foods, especially those high in sugars and fats, increases AGEs in the body, affecting the microbiome and overall health. Continuous glucose monitoring is crucial for understanding individual sugar responses and managing AGE formation. Inhibiting AGE formation can be achieved through lifestyle changes, including dietary modifications, reducing sugar intake, and practicing intermittent fasting. Certain vitamins and natural compounds like curcumin, alpha lipoic acid, and flavonoids found in vegetables and herbs can help counteract the formation of advanced glycation end products (AGEs) in the body. AGEs are formed when sugars in food combine with proteins and fats during cooking, especially through processes like reheating, frying, baking, and grilling, leading to tissue damage and various health issues. Foods high in sugar, processed foods, and animal products are particularly rich in AGEs, with cooking methods like frying and grilling exacerbating AGE formation. Consuming moist-cooked foods, marinating with lemon or vinegar, and avoiding high-temperature cooking methods can help reduce AGE formation. Processed meats, fried foods, and high-carb items are among the worst offenders for AGE content, while fruits, vegetables, and moist-cooked proteins tend to have lower levels. Proper cooking techniques such as poaching, stewing, or steaming can significantly lower AGE levels in food, making them healthier options.   • Ive lost 15 pounds in 2 weeks from intermittent fasting of 1 meal a day with low carb and protein and greens. Ive had eczema my whole life and its gone, my chronic painful acid reflux is gone and my irritable bowel syndrome is gone, I sleep better no more waking up and can't fall back asleep, I have energy which I haven't had in 30 years. I already need smaller pants and I can see the weight loss in my face.

  • Hands down the most profound lecture I have ever heard. After looking up this Doctors credentials, and listening to his passion on prevention of CAD and many other diseases, Ive subscribed. He literally saves lives as a cardiologist. Also, he inspires and educates people on how food effects the body. One can think that they are eating healthy, managing their lipids, sugars, but have no idea that grilling our food or cooking in high temp is contributing to disease. Discovering AGEs is revolutionary.
