2 zucchinis or choice of squash
1/2 medium onion
2 garlic cloves
1 cup of corn
2 Tbsp butter
1/4 cup crema fresca ( half & half or heavy whipping cream)
1 cup of queso chihuahua (or your favorite melting cheese such as mozzarella)
Salt and black pepper to taste
Optional- queso fresco on top

We love zucchini! We like to make zucchini, garlic and mushrooms saute. Then we add it to burritos, pizza, tacos, whatever we are making that night. I love the idea of adding corn. I'll try that next time.

You video came across my feed and as soon as I saw this I ran to my kitchen and made it. I don't eat a lot of beans I didn't make it that far into the video . But I made the chicken and the zucchini with mushrooms and onions and the garlic. My husband is just starting to enjoy zucchini after being together for almost 30 yrs .
