How to Charcoal Grill a Beef Tri Tip

Given rising meat prices, I thought it would be helpful to produce this video to show my culinary students how to charcoal grill a beef tri tip. The tri tip comes from the lower part of the bottom sirloin. At $4.82 per pound (from Walmart on 6/9/2020), it's still an affordable cut of beef. NOTE: Just within the past 24 hours, this Walmart location slapped on a $2.00 increase, raising the price of beef tri tip to $6.82 per pound!

The roast in this this film weighed in at 2.4 pounds. After seasoning the meat and brushing it with olive oil, I seared it for two minutes over the coals (direct heat). I then moved it to the front of the grill away from the coals (indirect heat) where it cooked for 45 minutes prior to reaching an internal temperature of 153°F (medium well).


The length of time to cook a tri tip depends upon the weight, the heat of your grill, and the internal cooking temperature that you want. Use a digital thermometer inserted into the thickest part of the meat to measure the meat's temperature. For rare, you'd want to cook the tri tip until it was 125°F. Medium rare is 135°F. Medium is 145°F. Medium well is 150°F. Well done is 160°F.
