Pewds, the haste that you took with your beacon is not the max. If you click haste and then go to secondary powers, you'll see haste II (Which is basically instamine).

Incase pewds sees the comments for answers, you need to be a minimum of around 30 blocks away from where you want them to spawn. Also, there is a thing called mob cap, where it limits the number of mobs spawning/exist in a certain area around you. If you go 128 blocks away from a mob, it will despawn. Also, if there is any land near the fortress, rather than wither skeletons spawning, hoglins, zombie piglings, etc can spawn because there are other spawnable areas like the forest which take up space on the mob cap. This information will be useful when you make an automated mob farm,. Or a gold farm
