Delicious FALL Meals

HARVEST SOUP

2 Tblsp butter
1 cup onion chopped
1 tsp salt
1 tsp curry powder
1 1/2 tsp cinnamon
1/4 tsp nutmeg
2 pounds squash (we used butternut but you could use a mix)
1-2 cups apple chopped
6 cups chicken stock
1 cup coconut milk

Saute onions in the butter and then add in the spices once onions are soft. Stir in squash and apples. Cover with chicken stock, bring to a boil, reduce heat to a simmer. Cover and cook 30 minutes or until squash is soft. Blend. Add coconut milk or heavy cream.

TOMATO SOUP

1 onion, chopped
6 Tbsp butter
2 cans diced tomatoes
1 46 ounce jar of tomato juice
3-5 tsp sugar
2 Tbsp chicken stock
Black pepper
1 cup sherry
1 1/2 cups heavy cream
fresh basil
fresh parsley

Cook onions in butter. Add ingredients up to black pepper. Bring to almost a boil then reduce heat. Stir in sherry, cream, and fresh herbs.
