RECIPE: GRILLED PORK CHOPS
I recommend heritage pork
4x 1 1/2 " thick cut rib pork chops, bone in, about 240 gm each
1 Tbsp. olive oil (15 ml)
salt and freshly cracked black pepper to taste
smoked not hot paprika, optional
freshly chopped rosemary to taste
Mustard bbq sauce:
3 Tbsp. good quality yellow - German or American style mustard
2 Tbsp. apple cider vinegar (25 ml)
1 Tbsp. honey (15 ml)
splash Worcestershire sauce
chile flakes, optional
Make bbq sauce in advance and save in fridge until ready to use.
Preheat your Bbq to high
Season the pork chops, drizzle with olive oil. Sprinkle with herbs.
Grill for 6-7 minutes per side, approximately, brushing with bbq sauce once flipped, until internal temperature reads 160 D F or 71 D Celsius
Let rest and serve with your favourite sides.

I love y our comments, you've got shoes, that's me for over 50 years my husband complains about my overcooking these thick meats, even my steaks are like in french we say the semelles de souliers lol...thanks Christine I will try this.

Christine, I love grilled pork chops but I wish I I knew how to fry a chop without them being ++ tough. We really like pork loin chops but anytime I fry or bake them, they are dry and tough. Not sure if it's me or the lack of fat on loin chops. Do you have any tricks or tips?

.... have you ever tried a few coffee granules, to taste but not too much on each side whilst salting it, let it melt a little.... just gives it that exotic flavour... try it you will not be disappointed. We can call it an African twist.

If you cook your pork to 160 I’ll pass lol that’ll be bone dry
