I show how to perfectly cook lamb chops in a cast iron pan very simply with my 5 Dos & Don'ts. To french or not to french? See why I don't use any oil in cast iron pan and how to know when they are cooked. Served with freshly chopped mint, vincotto or pomegranate molasses and roasted grapes.

    Great tips on rendering the fat from the lamb chops: fat side first, medium-low heat. Worth the price of admission.

    As soon as you said "don't French the chops" and "I like my lamb medium" I was hooked. I'm Italian (my parents were born in Italy), and this is how we cook our lamb. I've liked and subscribed, thank you!

    Exactly! It seems that the flavor gets better as the meat cooks. Medium cooked lamb has better flavor than medium rare! We love lamb!

    Thank you Christine, will be looking forward to that. My friend is a Shepherd, every year i buy a whole Lamb from him, they are reared in the field behind my house. Look forward to some more of your cooking tips, Had my Lamb loin chops earlier, cooked them exactly from step one of your video, yes i get why to start with them in the pan upright with fat of the chop cooked first.     Finally a Lamb Chop video that makes a lot of sense. I also agree about not using a rich buttery sauce. The roasted grapes are a nice addition at first I thought they were mushroom caps. Also the garnish sets everything off. Your presentation is 5 star!

    I am sooo glad I came across your video! I was so ready to French my rack of lamb, but when you said that you don't have to do that, I was so relieved! There's and art and skill you need to do it right, and I don't have it. There is so much meat and deliciousness on that bone. Anyway, for someone who's never used a boning knife, I am glad to say I'll do it your way this time.

    Thank you so much, I looked at several recipes that took over and hour, kept searching I was hungry, it was late I saw cast iron, I stopped right there! I have cooked lamb shanks, and Boneless leg of lamb, but never tried chops. This was just outstanding!!!! Thank you, came out perfectly, paired it with fresh asparagus and radishes from my garden, and mash potatoes. Again Thank you!

    Those lamb chops are looking great and I love both them and the roasted grapes you made to eat with those fine looking chops. You know how to cook up the best food and I love eating it and miss being in the Air Force since they provided me with plenty of it when I was stationed in Southern California and worked for the contractor part time at the local air base.
