Sheldon helped Amy when she was sick because it was in the Relationship Agreement which HE prepared. As such, he was required by the Contract to help her while she was sick. As an aside: The spanking scene was the best ever!!!

My favorite part was that one sheet of paper landing on Jim Parson’s character Sheldon when he threw the papers he had written a new roommate agreement. That scene was hilarious and keeping a straight face was flawless for Jim, but I know after he stormed back to the hall he would turn back around laughing.

I though Sheldon's caring for Amy showed his evolution. The only one who didn't really evolve was Raj, except for being able to talk to women.
