Let's make a Russian and Ukrainian inspired dish called Ikra! I love growing zucchini in the summer, and I thought it would be fun to research recipes from my Polish and Ukrainian heritage to make with my zucchini harvest. Ikra is traditionally made with eggplant, and it is known as "poor man's caviar." Easy to make, preserves beautifully, and it is perfect for using up veggies from your garden harvest. It's lovely to eat spread on crostini.

I'm from rural Louisiana where farming is still king. I can come off as a city boy, but spent a lot of my youth helping family and friends out on their farms. While I can never be a farmer myself since Hay is my Kyrptonite I will always have a deep respect for those who do it. Your videos are so lovely and serene and you make it look so easy.
