Yes I was hoping you’d let the batter rest before cooking. Always do that with any pancake mix. It lets the baking powder activate and it gets all fluffy and bubbly before you cook it resulting it a fluffy thick pancake. Just don’t mix it after letting it rest.

Yum I've been on a pancake kick! I make reg pancake batter thin it out to make thin pancakes not to be confused with crepes they are thin but still fluffy spoon it out then tilt the pan so it spreads more. I love eating them with kefir so good!❤🎉

Liquid measuring is different than dry measuring cups like the cute ones you used. It will affect the recipe. Good that you realized that you needed your thin out batter. I love the Trader Joe’s ube pancake mix. I use coconut milk to make it. I thin it down to make crepes too and serve with berries, whipped coconut cream and Nutella.

We love making ube mochi waffles using Mochiko flour! Then we make a haupia syrup.
