  • Great, informative video. As Derek said above: Use a TOASTED sesame oil, especially for fried rice. Also use oyster flavored sauce (no, it doesn’t taste like oysters, and it’s a very thick sauce). Just like when using just a little toasted sesame oil, use a little oyster sauce towards the end and mix it in well. Don’t overdo it with either or it can cause your rice to flash steam because of the moisture content and it will overpower the flavor and could make your rice soggy. A little goes a long way. I spent a month frying rice 3 times a week trying to find the taste my family and friends like best, and adding those 2 ingredients resulted in the best tasting restaurant style fried rice.

    I’ve been a “griller” and a “smoker” for a while. I’m just getting into “griddling” (first time this weekend). I recently discovered your channel and really have enjoyed the videos. FYI - Ever wonder why movie theater popcorn tastes better than homemade? Coconut oil. You keep putting them out and I’ll keep watching. Thanks!

  • you season with flax oil because it's the best oil for polymerizing your griddle. pro tip - use flax oil for your first 3 or 4 seasoning layers & then add 2 or 3 seasoning layers of grapeseed oil on top of it

    I recently picked up the Weber full-size griddle insert for my 3-burner Gensis II. New to griddling so your videos have been pretty good for fast-tracking me to using it. The insert is Carbon Steel and I like it, but only done 1 cook on it thus far.

I just watched a video right before this one and it had a woman saying to use PAM on the griddle and to get the butter flavored one for steaks and breakfast foods... She says she has used it since she got her griddle and it's been great... I trust you more than her though and I did just look up where Blackstone says not to use it after you said it... Thank You again!!!

    I agree Johnny. I use canola oil and buy it by the gallon. It's cheaper and leaves more money for beer (also a necessary tool for griddling).
  • Great Info....Only had my Blackstone a few days, but Avocado oil is what I used to season and cook with and like the neutral flavor.

    EVOO can go over 400 degrees, plus has a large amount of antioxidants which will help reduce free radicals released when cooked at even higher temps.

  • For the amount of times I use my blackstone I don’t mind using avocado or grape seed oil,thanks for the info,I’m new at grilling. Thanks for your humer it makes your show.
  • I used to cook with avocado oil, but I stopped using it because I find the taste of very bad. I've scrapped good steaks with it. I don't know if it's true but Chef Jean-Pierre said that clarified butter (or gee) is one of the best thing for cooking. I will give it a try. I won't put too much because the taste is very strong. Much more than standard butter.
