Matfer Bourgeat Remix - 6, FRIED CHICKEN

Published 2019-11-20
Got a new set of three Matfer Bourgeat black carbon steel pans yesterday...so I thought (being me), I'd take some time and of course modify it to suit my tastes. Mostly because these pans come with a VERY DIFFICULT to remove wax/plastic coating. I decided instead of scrubbing with hot water, I'd use abrasives and my shop to make the pan better!

I don't own any music in this video, any music in the background just happened to be what was playing in my shop.

Those skillets appear to be made by Turk Metal from Germany. That would also explain your problems removing the rust protection. Turk recommends to soak the skillet in hot water and washing powder - yes, washing powder, not dish soap. Leave the skillet in that solution for at least 30 minutes, then start removing the protective coating with steel wool and a lot of elbow grease. It is still a lot of work, but at least the coating will soften up a lot from the washing powder. That's quite some nasty stuff Turk is putting on their skillets to protect them from rust. I feel with you, I own 10 of them myself.

Counterpoint to the guy who keeps saying to use washing soda, supposedly rubbing alcohol removes the factory coating quite easily. Have not tested it myself, don't own a Matfer pan.
