Years ago I asked my mom for her tinga recipe. She told me 2-3 canned Chipotle peppers. I took it to mean 2-3 cans!! I put 1 can to start and figured I'd taste and see if it needed the second can. Oh man was my mouth on fire!!! I tried everything I could possibly think of to tame the heat but it was no use. ๐ ๐ I learned a valuable lesson that day about the Chipotle peppers lol

This was like my favorite dinner growing up. Make some tostadas, get some good cotija cheese and a few avocados... Delish! We are a big family and i love recipes that can feed an army. We usually accompanied tinga with a nice sopita de fideos. We are working class, afterall! Recipes like these feel like home to me.
