Hello my beautiful fam!! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! ❤️ hope you all had an amazing Christmas I loved getting all your recreations it seriously made my heart extremely happy!

Today I want to share with you how to make the best red chicken pozole( pozole rojo de pollo) a lot of you have asked me for my recipe and here it is, it’s very similar to my original recipe    • HOW TO MAKE POZOLE ROJO | RED PORK PO...   the only difference is the time of cooking and on my chicken pozole I like to add Chile morita for a little more spice and smoky flavor, Chile moritas are very similar to dried chipotles so if for a reason you can’t find them, you can of course use them! Just keep in mind chile chipotles are a little bit more stronger in smoky flavor 😊 I personally don’t like it to taste so much like it that’s why Chile morita is the best combination with New Mexico, Chile ancho and arbol 😉 hope you give it a try and enjoy it just as much! 💗

Ingredients:
For the meat:
5 lbs chicken
1 onion
1 garlic head
3 bay leaves
Salt (your liking) I used 5 tbsp
110 oz hominy- my favorite brand is Juanitas
For the sauce:
20new mexico/ chile guajillo pods
5 chile de árbol(optional)
5 chile morita
3 chile pasilla
4 garlic cloves
1/2 onion
1 tbsp chicken bouillon
1 tbsp oregano
1 tsp whole cumin
1 tsp whole black pepper
8 whole cloves
1 serving of love 💕

    Another delicious success with your recipes! I did tweak it a bit as I only needed 5-6 servings. I used the instant pot pozole rojo and the chicken pozole recipe to come up with" instant pot chicken pozole" and a smaller batch. It was wonderful. I had gotten into a sad habit of using canned enchilada sauce for my pozole for a quick version while working. Truly, it doesn't take that long to prepare the chilies for a much earthier and richer sauce! Can't wait for leftovers tonight!
