when I first attempt in making Egg Drop or Tomato Egg Drop Soup, I went and mess it up by pouring the eggs way too soon where clumps appear and texture changed but my mom showed me to turn off the stove first, wait a little bit then slowly pour it in to get the right texture you needed.
