I think he's badmouthing his brother because he doesn't want to admit he misses him, and he's probably also trying to dull the sting, not only of his death but also the fact Viserys would probably never forgive him for this.

I remember What Viserys said in Season 1 ep 1 that Daemon is ambitious but lacks the Patience for the Throne..( that is how well Viserys understood his brother and not that he didn’t trust him)

He could not trust YOU" it was very satisfying to say the least when she tells him this but this is the very reason Otto Hightower was able to take advantage of Viserys for so many years. Otto is an opportunist by all means. Daemon loved his brother no doubt and wanted his love and he wanted to rule with Viserys. He wanted to be his hand of the king. Daemon expected everything from Viserys yet he never gave him anything. Daemon was just not trustworthy. Rhaenyra trusted him and Daemon blew that into the worst possible thing he could do.
