How To Cook A Perfect Steak | Christine Cushing

Perfecting a steak without the help of a bbq can pose some challenges, so I want to help you master this simple technique how to cook a perfect steak every time. We get a visit from special guests, maillard and umami by searing the steak on both sides to develop a deep brown crust and finish it off with garlic, butter and cremini mushrooms for the win. The whole pan is transferred to the oven for an evenly cooked steak all the way through. Guys, please send me your thoughts! FULL RECIPE BELOW.

RECIPE: STEAK & GARLIC BUTTER MUSHROOMS

Ingredients:

12 oz Striploin steak ( New York) 360 gm 1 ½ “ thick
Olive oil
Several sprigs Freshly chopped thyme
Kosher salt and pepper to taste
1 sprig whole rosemary
Big handful cremini or portobello mushroom, sliced
1 whole clove garlic, crushed
1 Tbsp. butter (15 ml)
¼ cup red wine or to taste (50 ml)
Preheat oven to 375 D F

Preheat a pan on high heat. Remove steak from fridge for 30 minutes before cooking.
Drizzle with olive oil and season with salt and pepper and freshly chopped thyme.
Sear on medium high for 2-3 minutes per side and 1 minute on the edges, so steak is evenly browned on all sides.
NOTE * searing time will vary depending on pan, heat etc. Once steak is seared on both sides, place the rosemary sprig and the sliced mushroom and garlic , around while, finishing the searing. Season mushrooms with salt and pepper also.
NOTE * if doing 2 steaks, do not add mushrooms until steak goes into oven to avoid steaming the steak.

Transfer the whole pan to 375 degree oven on middle rack and roast for 4-7 minutes until a thermometer reads 120 D when inserted into centre. Remove immediately and let steak rest on board. Return the pan with mushrooms to stove stop and continue to cook them until golden brown. Add a tablespoon of butter and let it melt. Deglaze with a splash of red wine until the liquid is mostly evaporated.

Remove from heat. Add any dripping from meat to the mushroom sauce.

Slice the steak and spoon mushrooms over top.

Serves 2

    Totally agree with you, this is exactly how I pan fry a steak to a perfect medium rare (unlike a raw state some insist is medium rare). Living in San Francisco, that beautiful steak (prime) cost about $50.00, and the last thing you want to do is ruin it, lol. Love the way you cook Christina. Thank you for the upload, always appreciated!
